Risotto al salmone/Italian risotto with salmon


I think rice has extraordinary powers! It has a double connection with the word Earth: it not only derives directly from this element, but for the past 8,000 years its history has been associated with the history of Mother Earth. So it must have super powers!
Its many varieties are cooked all over the world, with different procedures and ingredients.
That's why this question came up to my mind. In our collective consciousness, if I say: "Think about a recipe with rice", each one of us will think about a different recipe according to personal taste, background, country or region of origin, religion, the season...
There's just one thing I'm pretty sure about.
The majority of us Italians would think about Risotto! Am I wrong?!

Per me il riso è un alimento che ha poteri straordinari. E' doppiamente legato alla parola Terra: non solo arriva direttamente da questo elemento, ma da circa 8000 anni la sua storia accompagna quella della Madre Terra. Per forza deve avere dei poteri straordinari!


Le sue tante varietà sono cucinate in tutto il mondo, con procedure ed ingredienti sempre diversi. Per questo mi è sorta questa domanda. Nel nostro immaginario, se io dico: "pensa a un piatto a base di riso", ognuno di noi immaginerà qualcosa di diverso in base ai propri gusti personali, alla propria origine, al paese o alla regione in cui vive, alla religione di appartenenza, alla stagione...
Di una sola cosa sono abbastanza certa.
La maggior parte di noi italiani penserà ad un risotto! Mi sbaglio?!


Ingredients for 4 servings
1 cup Carnaroli or Arborio rice
4 cups vegetables stock (prepared with carrot, onion, celery, potato)
3 T chopped shallots or onions
2 T olive oil
1/4 cup dry white wine
4 ounces smoked salmon finelly chopped
2 T cream
1 1/2 T chive

Heat 2 T of olive oil in a cast iron skillet, or the heaviest, non-stick skillet you have.
Add about 3 T of chopped shallots or onions to the oil and sauté for 2-3 minutes over medium heat then add the salmon and sauté for about 1 minute.
Add your rice. Stir the rice well with the onions and oil for 1 minute. Add 1/4 cup of dry white wine. (this time I prepared this recipe for Easter and I used Champagne!)
When the wine is about 3/4's absorbed, reduce the heat to the lowest setting if you are cooking in an iron skillet, (low medium if in anything else), and ladle in enough stock to cover the smoothed out risotto.
When the added liquid will be absorbed, re-cover with more stock.
Continue this process for about 15/17 minutes. .
When the rice is mostly tender, but with just a hint of texture to it, and the liquid you have added to this point is mostly absorbed, add the cream.
At this point, stir the risotto profusely to blend in the cream and remove your finished product from the heat.
Let it stand for 3 or 4 minutes, add the chive and then serve.

Ingredienti per 4 persone

gr 350 riso Carnaroli o Arborio
1 l brodo vegetale (carota, sedano, cipolla, patata)
1 scalogno o 1 cipolla piccola
2 cucchiaio olio evo
1/2 bicchiere vino bianco secco
1 etto salmone affumicato tagliato a pezzettini
2 cucchiai panna da cucina
erba cipollina
Mettete l'olio in una pentola pesante, meglio se di rame e fate soffriggere la cipolla. Quando la cipolla sarà dorata, aggiungete il salmone e fate cuocere per circa 1 minuto.
Aggiungete il riso e fatelo tostare bene, dopo di che aggiungete il vino bianco (questa volta ho preparato il risotto per Pasqua ed ho usato dello Champagne!) e fate evaporare.
Iniziate ad aggiungere il brodo poco alla volta fino a quasi totale assorbimento, quindi aggiungetene ancora in modo tale da coprire il riso.
Continuate per circa 15/17 minuti.
Quando il riso sarà quasi pronto e il brodo che avete aggiunto quasi completamente assorbito, aggiungete un paio di cucchiai di panna da cucina. Non esagerate: la panna deve solo dare un poco di cremosità e non deve coprire i sapori del riso e del salmone.
Mescolate giusto il tempo necessario per amalgamare gli ingredienti e quindi spegnete il fuoco e lasciate riposare il risotto per qualche minuto.
Aggiungete un poco di erba cipollina e servite.

  2. In realtà il mio primo pensiero è per il risotto alla milanes, possibilmente con osso buco! Questa era la ricetta di pasqua...
