Tortino al cioccolato/Chocolate Cake


 It is almost Christmas like every year I received some invites for an exchange of gifts.
My kitchen for a few days has turned into a sweet factory: iced cookies of all shapes, chocolate chip cookies, cupcakes...
Every year I try to find new ideas for my cookie-gifts, but  if I receive a last minute invitation, a super safe recipe is a chocolate cake.
Please do not save on chocolate: always get a good quality one!

Ormai è praticamente Natale e in quest'ultima settimana anche a voi sarà capitato di essere invitata a qualche cena per uno scambio di regalo e auguri.
La mia cucina per qualche giorno si è trasformata in una fabbrica di dolci: biscotti glassati di tutte le forme, biscotti al cioccolato, tortine mono-porzione...
Per i regali golosi cerco ogni anno di trovare qualche nuova idea, ma per gli inviti, soprattutto quelli dell'ultimo minuto, una ricetta dolce super sicura è il tortino al cioccolato. Mi raccomando, non risparmiate sul cioccolato: prendetene sempre uno di ottima qualità!!


Tortino al cioccolato/Chocolate Cake

Chocolate Cake

20 gr. flour
80 gr. powdered sugar
100 gr. dark chocolate
100 gr. of butter
2 eggs
1 teaspoon of vanilla extract
salt q.b.

Cut the chocolate into pieces and melt in a pan large in a double boiler with the butter.
Break the eggs into a bowl, add sugar and vanilla and whip it, until mixture is thick and smooth.
At this point, you can combine the butter and chocolate mixture.
Add the flour and a pinch of salt.
Grease and flour your molds and fill them with the mixture. Be careful not to fill the molds more than 2 /3.
Bake at 180 ° C for about 15 minutes.

Tortino al cioccolato


Tagliate il cioccolato fondente a pezzi piuttosto grandi e fatelo sciogliere in un padellino a bagnomaria con il burro.
In una terrina rompete le uova, aggiungetevi lo zucchero e la vanillina e montate il tutto con una frusta, fino a ottenere una massa densa e omogenea.
A questo punto potrete unire il composto di cioccolato e burro, continuando ad amalgamare gli ingredienti. Aggiungete, infine, anche la farina e un pizzico di sale.
Imburrate e infarinate i vostri stampini e riempiteli con il composto. Fate attenzione a non riempire completamente gli stampini, evitando così che il composto fuoriesca durante la cottura. Cercate di riempirli per non più di 2/3.
Infornate a 180°C per circa 15 minuti.

Torta soffice di mele/Soft Apple Pie

The Christmas menu is decided, all the gifts already bought. Just have to be prepared for last-minute duties and enjoy the lights that shine in my house sitting on the couch with a steaming hot chocolate and a slice of apple pie!
There are many variations of this recipe, all delicious. My favorite is the tarte tatin, but if it's about rustic taste and truly "at home" flavors, I recommend this version of apple pie: the softness given by mascarpone is really amazing, trust me!

Il menù di Natale è deciso, i regali tutti già comprati. Non resta che prepararsi ai preparativi dell'ultimo momento e godersi le luci che brillano in casa seduti sul divano con una cioccolata fumante e una fetta di torta di mele!
Ne esistono mille varianti, tutte buone. La mia torta di mele preferita è la tarte tatin, ma se parliamo di gusti rustici e veramente "di casa", adoro questa versione di torta soffice di mele: la morbidezza data dal mascarpone è davvero incredibile!

Torta soffice di mele/Soft Apple Pie

Soft Apple Pie

4 apples
140 gr. sugar
3 eggs
300 gr. flour
1 teaspoon of baking powder
2 teaspoons of vanilla extract
100 gr. mascarpone
Cinnamon powder q.b.
1 pinch of salt

In a bowl, mix the sugar with the eggs and stir vigorously with a whisk, until obtaining a soft foam.
Stir in a pinch of salt, flour, baking powder, vanilla and stir. Also add the mascarpone and mix well with the other ingredients.
Wash the apples, peel, remove the seeds and cut into small cubes. Add them to the mixture, along with the cinnamon, and stir.
Pour the mixture into a baking pan lined with parchment paper and bake at 350° F for about 50 minutes.
Remove from the oven and let the cake cool to room temperature before serving.

For a more rustic flavor, if you wish, you can replace refined sugar with cane sugar and flour 00 with the integral.

Torta soffice di mele

4 mele
140 gr zucchero
3 uova
300 gr farina
1 bustina lievito per dolci
2 cucchiaini di vanillina
100 gr mascarpone
cannella in polvere
1 pizzico di sale

Riunite in una terrina lo zucchero con le uova e mescolate energicamente con una frusta da cucina, sino a ottenere una spuma soffice.
Incorporate un pizzico di sale, la farina setacciata, il lievito, la vanillina e mescolate. Unite anche il mascarpone e amalgamatelo bene agli altri ingredienti.
Lavate le mele, sbucciatele, eliminate i torsoli e tagliatele a cubetti piccoli. Incorporatele all’impasto, insieme alla cannella, e mescolate.
Versate il composto in una tortiera rivestita con carta forno e infornate a 180°C per circa 50 minuti
Sfornate la torta e fatela raffreddare a temperatura ambiente prima di servirla.

Per un sapore più rustico, se desiderate, potete sostituire lo zucchero raffinato con quello di canna e la farina 00 con quella integrale.

Many things have changed in my life, thankfully everything's positive: I got married, I had a great trip and I started a new job that is keeping me very busy and so far away from the stove. Well, this is the only sad not!
I'm sorry I have not even had time to comment on your blogs, but I have not forgotten and I continued to visit everyone of you, even if in silent mode ...

Today I'm back with a "very winter" recipe, a special risotto with radicchio, prepared with a fragrant rice of Lodi that I bought by the manufacturer. 
Sometimes the radicchio is a bit 'too bitter for my taste, so I softened this note with an apple. Believe me, the two ingredients go really well together!

Che fine avevo fatto? Ve lo eravate chiesto?!?
In effetti in questi mesi di assenza sono cambiate un po' di cose, per fortuna tutte in positivo: mi sono sposata, ho fatto un bel viaggio e ho iniziato un nuovo lavoro che mi sta tenendo molto impegnata e quindi lontana dai fornelli. Ecco, questa è l'unica nota triste!
Mi spiace anche non aver avuto tempo per commentare sui vostri blog, ma non vi ho dimenticate e ho continuato a farvi visita, anche se in modo silenzioso...

Oggi torno con una ricetta veramente invernale, uno speciale risotto al radicchio, preparato con un profumato riso del lodigiano che sono andata a prendere di persona dal produttore.
Qualche volta il radicchio è un po' troppo amaro per i miei gusti, quindi ho smorzato questa sua nota con dei pezzetti di mela. Credetemi, i due ingredienti si sposano benissimo!

Risotto al radicchio/Risotto with radicchio
 Risotto with radicchio and apples

4 servings

240 g Carnaroli rice
1l beef broth
1 shallot
300g radicchio
30 g butter
50 g parmesan cheese
1/2 cup white wine
1 apple
salt
pepper
oil

Finely chop the shallot and fry in a pan with a little oil and a knob of butter.
Add the radicchio previously washed and cut into strips. Let simmer for a few minutes the radicchio, add the apple cut into small pieces and mix.
Add the rice. Toast and then add the wine, allowing fade .
Start by adding a little broth at a time and let it absorb before adding more .
When the rice is perfectly cooked , stir in the remaining butter and the Parmesan cheese .


Risotto al radicchio e mele

per 4 persone

240 gr riso Carnaroli
1l brodo di carne
1 scalogno
300 gr radicchio
30 gr burro
50 gr parmigiano
1/2 bicchiere vino bianco
1 mela renetta
sale
pepe
olio

Tritate finemente lo scalogno e fatelo soffriggere in una casseruola con poco olio e una noce di burro.
Aggiungete il radicchio precedentemente lavato e tagliato a striscioline. Fate stufare il radicchio per pochi minuti, aggiungete la mela tagliata a pezzetti e mescolate. Dopo pochi minuti, aggiungete il riso. Fatelo tostare e poi aggiungete il vino facendolo sfumare.
Iniziate ad aggiungere un poco di brodo alla volta e fatelo assorbire al riso prima di aggiungerne altro.
Quando il riso sarà cotto al punto giusto, mantecatelo con il burro restante e il parmigiano.
