Insalata di pasta con seppie e verdure/Pasta Salad with Cuttlefish and Vegetable

I'm not a big eater of pasta and cook it doesn't give me any particular satisfaction. I do prefer soups, risottos, potages, even if almost every week I cook a hearty carbonara!

But in summer I can not resist the pasta salad: I prepare it in large quantities so that I can have enough pasta for at least a couple of days and I'm always looking for new and exotic recipes.
There's no limit to the imagination in preparing pasta salad although this time I propose a fairly linear one, with undoubtedly  Mediterranean flavors and colors!

Non sono una grande mangiatrice di pasta, né mi da particolare soddisfazione cucinarla. Alla pastasciutta preferisco le minestre, le zuppe, i risotti, anche se a casa mia, quasi tutte le settimane, si cucina un'abbondante carbonara!

Ma in estate non riesco a resistere alla pasta fredda: ne preparo in grande quantità di modo che possa essercene a sufficienza per almeno un paio di giorni e sono sempre alla ricerca di nuove ed esotiche ricette.
Non c'è limite alla fantasia nel preparare un'insalata di pasta anche se questa volta vi propongo una ricetta abbastanza lineare, con sapori e colori decisamente mediterranei!

Pasta salad with cuttlefish and vegetables

Ingredients for 6 servings

14 oz kamut fusilli pasta
14 oz cleaned cuttlefish
2 zucchini
2 red peppers
2 green onions
9 oz fresh peas
3 tsp salted capers
4 tbsp extra virgin olive oil
1/2 lemon
salt
pepper

Marinate for 30 minutes the cuttlefish in a bowl with a tablespoon of olive oil, salt, pepper and lemon juice.
Meanwhile,  heat the remaining oil in a skillet and add onions and peppers and, after a few minutes, the zucchini and peas. Sauté over high heat for about 5 minutes then remove from the heat and add the capers rinsed from the salt. Add salt and pepper.
Preheat a grill and cook the cuttlefish. Cut into strips and add to vegetables.
Finally, cook the pasta "al dente" (
cooked until just firm). Drain and cool it with a little cold water.
Put in a bowl, toss with the cuttlefish and vegetables, season with salt and pepper, let it cool down to room temperature and then refrigerate.
Prepare it a bit 'of hours before or even the day before: the pasta will have time to take all the flavors and will be more tasty!

 Fusilli di kamut con seppie e verdure

Ingredienti per 6 persone

400 gr fusilli di kamut
400 gr seppie pulite
2 zucchine
2 peperoni rossi
2 cipollotti
250 gr piselli freschi
2 cucchiai capperi sotto sale
4 cucchiai olio evo
1/2 limone
sale
pepe

Fate marinare per 30 minuti le seppie in una ciotola con un cucchiaio di olio, sale, pepe e il succo di mezzo limone.
Intanto fate scaldare il rimanente olio in una padella e aggiungete in ordine le cipolle e i peperoni e, dopo qualche minuto le zucchine e i piselli. Fate saltare a fuoco vivo per circa 5 minuti poi spegnete il fuoco e aggiungete i capperi sciacquati dal sale. Salate e pepate.
Fate scaldare bene una griglia e cuocete le seppie. Tagliatele a striscioline e aggiungetele alle verdure.
Infine, fate cuocere la pasta bene al dente. Scolatela e raffreddatela con un poco di acqua fredda.
Mettetela in una zuppiera, conditela con le seppie e le verdure, aggiustate di sale e pepe, fatela raffreddare bene a temperatura ambiente e poi mettetela in frigo.
Preparatela un po' di ore prima o addirittura il giorno precedente: la pasta avrà il tempo di prendere tutti i profumi e risulterà più saporita!

exhaustion, and sometimes the stress, I had a great experience!
But I missed the kitchen of my house and your virtual kitchens that I always picture through your blogs. 
This is why today I am particularly happy to write and prepare this post!

Sono tornata!
Sono tornata dopo 15 giorni di duro lavoro a Malta. Nonostante la stanchezza, e qualche volta lo stress, ho vissuto una bella esperienza!
Ma la cucina di casa mia e le vostre cucine virtuali che immagino attraverso i vostri blog mi sono mancate.
Per questo oggi sono particolarmente felice di scrivere e di preparare questo post!

As I said, in Malta I spent two intense weeks of work, problems to be resolved, peaks of almost 110 F of heat and my blood pressure under my feet; but  they have also been two weeks of blue sea, smiles, new friends, new memories... and a new dining experience: the maltese pastizzi!
The pastizzi is a delicious snack of puff pastry filled with ricotta cheese or peas.
Here I prepared my own personal version, dedicated to all my Maltese friends!

Come dicevo, a Malta ho passato due intense settimane di lavoro, problemi da risolvere, picchi di caldo di 43 gradi e la pressione sotto i piedi; ma sono anche state due settimane di mare azzurro e blu intenso, sorrisi, nuove amicizie, nuovi ricordi... e una nuova esperienza culinaria: il pastizzi maltese!
Il pastizzi è un delizioso spuntino di pasta sfoglia ripieno di ricotta o piselli.
Qui ho preparato una mia personale rivisitazione, dedicata a tutti gli amici maltesi!

Maltese Pastizzi

Maltese Pastizzi (Revisited)

Ingredients for 10/12 pastizzi

Pastry:
14 oz flour
water
salt
4 oz margarine

Filling:

14 oz fresh or frozen peas
1 onion
3/4 little mozzarella of bufala
2 spoons extra-virgin olive oil
salt
pepper


Put the flour in a mixing bowl, add enough water to make  a stiff dough and beat until smooth. If the pastry is at all sticky add more flour.
Roll out the dough on a floured surface giving it the shape of a square about12 inches square, put half the margarine and fold the 4 corners of dough onto the margarine in order to completely enclose it.
Knead again on floured board and roll the dough out once again.
As before, put the margarine in the center of the dough and fold the 4 corners of the remaining closing completely. Roll out the dough for the last time.

For the filling, cook the peas in boiling salted water. When they are completely cooked, drain them.
In a skillet, saute the onion, finely chopped, in 2 tablespoons of oil. Add the peas, salt and pepper and cook for a few minutes.
With a blender, puree the peas.
Cut the dough into squares about 4 inches and fill the center with a generous spoonful of mushy peas and a piece of mozzarella. Pepper again and close the square like a ravioli.
Bake at 390 F for about 20/25 minutes, until the dough is golden.

Maltese Pastizzi

Pastizzi maltese (Revisited)

Ingredienti per 10/12 pastizzi

400 gr farina
acqua
sale
120 gr margarina

per il ripieno:

750 gr piselli freschi o surgelati
1 cipolla
3/4 mozzarelline di bufala
2 cucchiai olio evo
sale
pepe

Mettete la farina in una ciotola, aggiungere acqua sufficiente a ottenere un impasto compatto e impastate fino a quando non otterrete una pasta liscia. Se la pasta risulta un po' appiccicosa, aggiungete altra farina.

Stendete la pasta su un piano infarinato  dandole la forma di un quadrato di circa 30 centimetri di lato; mettete metà della margarina e ripiegate i 4 angoli della pasta sulla margarina in modo da racchiuderla completamente.
Impastate di nuovo sul piano infarinato e tirate ancora una volta la pasta.
Come prima, mettete al centro della pasta la margarina rimanente e ripiegate i 4 angoli chiudendo completamente. Stendete la pasta per l'ultima volta.

Per il ripieno, fate cuocere i piselli in acqua bollente e salata. Quando saranno completamente cotti, scolateli.
In una padella, fate soffriggere in 2 cucchiai d'olio la cipolla tagliata finemente,aggiungete i piselli, salate, pepate e fate cuocere per pochi minuti.
Con un frullatore a immersione, riducete i piselli a purea.
Tagliate la pasta in quadrati di circa 10 cm e riempite il centro con un abbondante cucchiaio di purea di piselli e con un pezzettino di mozzarella. pepate ancora e richiudete il quadrato come se fosse un raviolo.
Infornate a 200 gradi per circa 20/25 minuti, fino a che la pasta non risulti ben dorata.

Con questa dolce ricetta, vi voglio anche salutare perchè per due settimane sarò all'estero per lavoro e sicuramente non avrò né il tempo né l'opportunità per cucinare. Sigh!!!

Matcha panna cotta with redcurrant sauce

Ingredients for 6 molds:

2 cups of cream
1/2 cup of sugar
2 1/2 sheets gelatin
a vanilla bean
4 teaspoons of matcha tea
1 cup redcurrant
1 tablespoon powdered sugar

Soak gelatin sheets in cold water.
Heat the cream and sugar over medium heat without bringing to a boil. When the cream is hot and sugar has melted, turn off the heat, add the matcha and mix well.
Squeeze the gelatine leaves and add them to the mixture of cream and stir until they dissolve completely.
 Pour into molds and refrigerate for 4/5 hours at least.
For the sauce, whisk the currants with the icing sugar and serve with the panna cotta.

Panna cotta al matcha con salsa di ribes

Ingredienti per 6 stampini:

500 ml di panna
100 gr di zucchero
2 1/2 fogli colla di pesce
una stecca di vaniglia
4 cucchiaini di thè matcha
1 vaschetta ribes rossi
1 cucchiaio zucchero a velo

Mettete a bagno in acqua fredda i fogli di colla di pesce.
Fate scaldare la panna e lo zucchero a fuoco moderato, senza portare a bollore. Quando la panna è calda e lo zucchero si sarà sciolto, spegnere il fuoco, aggiungere il  matcha e mescolate bene.
Strizzate i fogli di gelatina e uniteli al composto di panna e mescolate bene fino a farli sciogliere completamente. Versate negli stampini e mettete in frigo per 4/5 ore almeno.
Per la salsa, frullate i ribes con lo zucchero a velo e servitela insieme alla panna cotta.
